Thin Mint Pork Mole

It's Girl Scout Cookie season! As a proud lifetime member of the Girl Scouts, cookie season is one of my favorite times of the year. While I wasn't all too thrilled some years selling them when I was younger, the benefits I received made it all worth it. Is this about to turn into a bit of a cheerleader for Girl Scouts moment? Absolutely.

I was/have been a Girl Scout since I was in kindergarten. I registered as a lifetime member when I graduated high school. I earned my Gold Award, which is the highest award you can earn as a Girl Scout. Side note, it's also more difficult than the Boy Scout's Eagle Scout. I traveled to 38 states, 4 Canadian provinces, and 2 Australian territories. I went on an Alaskan cruise, spent 10 days on a southwest road trip, snorkeled in the Great Barrier Reef, and did so much.



Last year, my local council asked me to create a small recipe book using Girl Scout cookies. As someone who enjoys a challenge and as someone who loves being creative in the kitchen, this was a great opportunity for me.

In the book, I created many dessert recipes because they were the most obvious. However, the savory dishes were my favorite. This recipe was actually suggested by my brother, so I can't take all of the credit. It turned out great and was actually quite simple to make. Mint and pork, good. Chocolate and pork, good. Put all of that together and you have a great dish that will shock everyone.
